Klipkers, also known as the Candlewood tree, is endemic to Paarl Mountain and prominent between rock crevices. Apart from being used as firewood, several other early farming activities involved this tree. The bark was used in tanning and wagon brake-blocks. When the fruits fall among the rocks, they are eagerly consumed by the dassies (hyrax) that live there.
 
Vintage Notes
These vineyards are planted on decomposed Table Mountain sandstone shale in combination with decomposed granite soils. Grapes were harvested by hand and transported in lug-boxes to the cellar. Harvesting conditions were good with vines yielding between 4-5 tonnes/ha.
 
Winemaking
Fermentation took place naturally in stainless steel tanks and 15% in older 225l French Oak barrels. All three varietals were vinified individually before blending.
